Sherry Vinegar receives its unique personality from Jerez wines, noble wines par excellence, from which it inherits unsurpassed qualities and nuances. It is, therefore, the region known as Marco de Jerez, in the south of Andalusia, where these unique wines are made, the place where the Sherry Vinegar comes from.
Sherry vinegar is one of the most prized gastronomic condiments in the world. It is a product obtained by the action of acetic bacteria on the wines of Jerez, well of the year without fortifying or in aging. The vinegar is aged following an exclusive breeding process: the traditional system of soleras and criaderas. A genuine aging system in specially developed American oak barrels that explains the high complexity and extraordinary concentration of this seasoning.
Of deep mahogany color and brilliant amber reflections. It stands out for its unmistakable and powerful aroma, laden with nuances that remind us of vanilla, nuts and processed wood. To this is added a taste to the acid palate and secant that remind of its origin from Jerez.
According to the aging period in wood three types are distinguished: Sherry Vinegar, Reserva Sherry vinegar, and Gran Reserva Sherry vinegar. According to the wines used: Sherry vinegar, Sherry vinegar Pedro Ximénez and Sherry vinegar Moscatel.
