These shoulders have the same origin as the ham C.O. It stems from 100% Iberian pigs which are reared in oak meadows, where they feed solely on acorns for 4 or 5 months of the year. During this time the animals gain around 60 kg of weight.
The ham is cured for about 2 years under natural conditions in our curing houses in the "Sierra de Huelva".
During the whole productive process the traceability of the products is checked twice. By external certifiers and also by the technicians of the certification of origin.
