It presents a compact and crumbly texture. Its slightly spicy and strong taste persists in its extraordinary taste in our mouth. Result of a delicate traditional process where we care to the smallest detail. We have maintained indigenous and unique properties of the flavor of the best sheep's milk of Lacaune race. Its slow maturation in our cheese dairy and treatment oiling and flipping give our cheese its excellent fragrance and unique flavor that make it different from other cheeses on the market, a unique bouquet for the palate.
